Kashmiri Butter Chicken – from Ultimate Slow cooker recipe book from our Gloven® store
A great tasting recipe that will cook all day while at work or play and ready to walk in the door to. Just add the almonds and cream & coriander just before serving. Great with Nan breads and Pilau rice. For a really quick cheat just purchase the ready made rice. Trust me no-one will know!
Kashmiri Butter Chicken
Ingredients:
2 Onions, cut in quarters
3 Garlic cloves
4cm of root ginger, peeled
1 large red chilli, halved, seeds disgarded
8 boneless, skinless chicken thighs
1 tablespoon of sunflower oil
25g (1 oz.) butter, salted or unsalted
1 teaspoon cumin seeds, crushed
1 teaspoon fennel seeds, crushed
4 cardamom pods, crushed
1 teaspoon paprika
1 teaspoon turmeric
¼ ground cinnamon
300ml (1/2 pint) chicken stock
1 tablespoon light muscovado sugar
2 tablespoons tomato purée
5 tablespoons double cream
salt to taste
Method
1) Preheat the slow cooker if necessary – see manufacturer`s instructions. Blend the onions, garlic, ginger and chilli in a food processor or liquidizer or chop very finely.
2) Cut each chicken thigh into four pieces. Heat the oil in a large frying pan and add the chick one piece at a time, until all the meat has been added. Cook over a high heat until evenly browned. Lift the chicken pieces out of the pan with a slotted spoon and transfer to a plate.
3) Add the butter to a frying pan and when it has melted add the onion paste. Cook over a more moderate heat until it is just beginning to colour. Stir in the crushed seeds, cardamom seeds and pods and ground spices. Cook for one minute; mix in the stock, sugar, tomato purée and salt. Bring to the boil stirring.
4) Transfer the chicken to the slow cooker pot, pour the onion mixture and sauce over the top and press the pieces of chicken below the surface of the liquid. Cover and cook on low for 5 – 7 hours.
5) Stir in the cream and serve garnished with toasted flakes of almonds and sprigs of coriander.
