Scrummy Chocolate Pound Cake

Pound Cake with Cocoa

Ingredients:

250g (8oz) unsalted butter

5 eggs

250g (8oz) caster sugar

2 teaspoons baking powder

40g ( 1 ½ oz.) bitter cocoa

Serves 6-8. Preparation time: 15 minutes. Cooking time: 35-40 minutes. Essential equiptment: 1kg/2lb loaf tin.

Method

1)    Preheat the oven to 160 degrees, Gas mark 3. Grease and flour the baking tin. Gently melt the butter in a saucepan without overheating. Break the eggs into a bowl and beat for one minute with the sugar. In another bowl sift together the flour, baking powder and cocoa.

2)    Add the flour and cocoa blend to the egg-sugar mixture and stir in, then add the melted butter and stir again.

3)    Pour the mixture into the prepared tin, put in the oven and bake for 35-40 minutes. Carefully unmould the cake while still hot and leave to cool on a baking rack. Eat warm for preference.
