BBQ Recipe – Fab Recipe with sausages – All Sorts of Sausages

PREPARATION TIME: 10 Mins

Marinating time: 2 hrs

Cooking time: 15 mins

Traditional BBQ recipe

Serves 6

 A selection of specialists sausages

 For the marinade:

2 glasses red wine (about 350 ml/12fl oz)

2 spring onions

1 small carrot

Juniper berries

2 bay leaves

1 tsp cayenne pepper

  1. Bring the red wine to the boil in a saucepan then take off the heat and leave to cool while preparing the other marinade ingredients.
  2. Chop the onions and slice the carrot into thin rings, crush a few juniper berries, then add all the marinade ingredients to the red wine.
  3. Arrange the sausages in a dish and pour over the marinade.  Leave in fridge 2 hours turning them from time to time. Before cooking just take out of fridge to make sure they are room temperature for cooking.
  4. Light the barbecue, place the grill to heat over the flames and when you have nice hot embers place the sausages on the grill.  Leave to cook for 3-5 mins, according to thickness, tehn turn them over and cook for a further 3-5 mins. Serve straight away.
  5. Great served with jacket potatoes and salad.

 

Hot tip:

You can use the marinade as a sauce.  While the sausages are cooking, reduce it over high heat.  Leave to simmer for 10 minutes, season to taste and it is ready to serve right away.
