1 Classic  BBQ  Soften  1  finely   chopped  onion  with  3-­‐crushed  garlic   cloves,  then  stir  in  a  400g  can  of   tomatoes,  85g  brown  sugar,  3  tbsp  cider   vinegar  and  a  squeeze  of  tomato   ketchup,  and  simmer  for  20  minutes.   Good  for  ribs.

 

2 Sticky  mustard  Whisk  together  equal   quantities  of  marmalade  and  grainy  mustard.  Good  for  sausages  or  pork.

 

3.  Hot  lime  In  a  food  processor  whizz   together  the  following  –  2  deseeded   green  chillies,  3  garlic  cloves,  1⁄2  tsp  black   peppercorns,  the  juice  from  two  large   limes  and  2  tbsp  sunflower  oil.  Good  for   lamb  and  chicken.

 

4 Shallot  Mix  together  3  finely  chopped   shallots  with  3  tbsp  red  wine  vinegar   and  2  tbsp  olive  oil.  Good  for  steaks.

 

5 Smoky  paprika  Mix  2  tsp  smoky   paprika  with  the  zest  and  juice  of  1   lemon,  2  tbsp  olive  oil  and  1  tsp  dried  mint.  Good  for  tuna  and  swordfish.

 

6. Greek  lemon  Whisk  the  zest  and   juice  of  1  lemon,  2tsp  oregano  and  2  tsp   mint  into  150ml  Greek  or  natural   yogurt.  Good  for  sardines.

 

7.  Sweet  soy  Mix  together  4  tbsp  soy   sauce,  2  tbsp  clear  honey,  2  tbsp  tomato   puree  and  2  tbsp  sunflower  oil.  Good  for   chicken.

 

8.  Creamy  tandoori  Finely  grate  a   thumb-­‐sized  piece  of  ginger  into  200ml   natural  yogurt,  then  stir  in  2  tbsp   tandoori  masala  powder  or  paste,  1   crushed  garlic  clove  and  2  tsp  cumin   seeds.  Good  for  lamb.

 

9.  Chinese 5-­‐spice Stir 1tbsp Chinese 5-­‐spice powder  into 4 tbsp sunflower oil with 1tsp caraway seeds, 1 tbsp runny honey and 2tsp toasted  sesame oil.  Good  for pork and chicken. steak.

 

10. Mixed pepper and thyme Mix 1tbsp crushed mixed peppercorns with  2tbsp thyme leaves and  4 tbsp olive oil.  Rub  on steaks  and leave to marinate for 15 minutes.  Good for steak.
